Main Dishes

Try a recipe which is quick and easy such as a Spaghetti Salad.

2-3 cups cooked spaghetti noodles

1 cup each deli turkey, ham and salami

1-2 cups chopped tomatoes

1 cup chopped black olives

1 - 1/2 jars of italian dressing. Toss and serve.


 

Easy Chicken and Biscuits

1 can condensed cream of celery soup

1 c condensed cream of potato soup

1 c milk

¼ ts thyme

¼ ts pepper

4 c cooked cut up veggies

2 c cooked, cubed chicken

1 pck refrigerated buttermilk biscuits

In a  shallow baking dish mix soups, milk spices and veggies and chicken. Bake at 400 degrees for 15 minutes or til hot. Stir and arrange biscuits over chicken mixture. Bake 15 minutes more til biscuits are done.

Chicken Broccoli

 1 bag 16 ounces frozen broccoli, thawed and drained.

2 cups cubed cooked chicken

2 c soft bread cubes

8 ounces American cheese slices

1 jar homestyle chicken gravy

½ c undiluted evaporated milk

in baking dish layer chicken, bread cubes and cheese, broccoli. Combine, gravy, milk and some pepper; pour over cheese. Bake in  375 degree oven for 40 minutes and let stand for 5 minutes

 

Garden Bounty Beef Kabobs

1/4 C low sodium soy sauce

2 T olive oil

1 T molasses

3 garlic cloves

1 t ground ginger

1 t ground mustard

Combine above ingredients in large ziploc bag.

Add 1 lb. boneless beef sirloin cut in 1 in. cubes

Marinate for 1 hour (or more)

Put on skewers, along with red onion, green pepper, zucchini, cherry

tomatoes, fresh mushrooms


 

Quick Fix layered chicken casserole:
 
1 (5 oz.) package scalloped potatoes
1 (103/4 oz.) can condensed cr. of mushroom soup
1 cup water
1/2 tsp. garlic pepper
1 (16 oz.) package frozen mixed vegetables, thawed and drained
1 (16 oz.) package frozen stir-fry veg., thawed and drained
1 lb. skinless, boneless chicken breast tenders
Paprika
 
1. Place the dried potatoes from the package in a 3 1/2 quart slow cooker.  In a medium bowl, mix the undiluted soup with the water, the sauce packet from the potato package, and the garlic pepper until well blended.  Drizzle just a little of this soup mixture over the potatoes.  Then layer the remaining ingredients in the slow cooker as follows;  the package of mixed veg. plus 1/3 of the stir-fry, 2/3 of the chicken, 2/3 remaining soup mix. remaining stir-fry, and remaining chicken. Pour the remaining soup mix evenly over the chicken.
2. Cover and cook on low about 4 1/2 hours, or until the chicken and potatoes are tender and cooked through.  Sprinkle paprika over the top.  Serve at once.
 
This fed our 6 plus some leftover.

 

 

Cranberry Chicken

6-8 Boneless, skinless chicken breast halves

1 can whole berry cranberry sauce

1 8 oz bottle Catalina dressing

1 envelope dry onion soup mix

1.Preheat oven to 350 degrees. Spray 9-13 glass baking dish with cooking spray.

2. in prepared dish, layer chicken breasts

3.  In a medium bowl, combine cranberries, dressing and soup mix and stir until well combined. P our over chicken making sure it coats each breast completely.

4. Bake in preheated oven for 1 hour or until chicken is tender and cranberries have formed a glaze. Makes 8 servings.

 

Easy Corned Beef and Cabbage

Boil for two hours a corned beef in spices and water to cover. Remove from water, saving it and place in baking dish. Warm in oven. Add cabbage to the boiling water and cook til soft and falling apart.

Taco Pie

1 1/2 lb ground beef                            1 c biscuit baking mix

1/3 c finely chopped onion        1 c grated mild cheddar cheese

1 envelope of taco seasonings   2 tomatoes, sliced

1  4 oz can diced green chilies,     1 8 oz carton sour cream

drained                                                  shredded lettuce

1 c milk                                                   1 more tomato, chopped

 

In a large skillet, cook and stir ground beef and onion until beef is browned. Drain.  Combine beef and taco seasoning and spread in a pie plate  Sprinkle with chilies.  Beat milk, baking mix and eggs until smooth, 15 seconds, on high in a blender or 1 minutes with hand beater.    Pour milk mixture over beef in pie plate. Bake uncovered in a preheated 400 degree oven for 35 minutes.  Top with sliced tomatoes; sprinkle with cheese.  Bake until golden brown, 8 more minutes Top with sliced tomato and sour cream.

Hamburger Soup

2 pounds hamburger, cooked and drained. Cook with garlic and onion. Place in stock pot or crock pot and add 3 cups beef broth, add 2 cans green beans, corn, tomatoes, carrots and potatoes.

Simmer all day and serve with shredded cheese on top and rolls
